Spicy tequila, mint and watermelon fresca


Anyone who likes to hang around with me for long enough knows I'm a huge jalapeño fan. I have jalapeños lying around in my fridge almost all the time, begging for me to eat them. I add them to my eggs in the morning, put them in my salads for lunch, and find a way to pickle them for my nightly meals. I just absolutely love the taste of them!

One of the best drinks I've ever had was a jalapeño tequila margarita that I chugged down while enjoying a stunning view of the ocean just at the perfect moment when the sun was setting behind the horizon. Of course, the experience left a great mark in my head and hasn't left me since, which helps for me to remember that amazing drink! So whenever I see the words 'jalapeño' and 'tequila' combined, I get goose bumps all over and get thirsty, real thirsty!

Which is why I couldn't resist trying this incredibly mouth watering drink made with watermelon juice, tequila, and jalapeños! Watermelons are all over the place these days and come so cheap, it would be a sin not to buy any and take advantage of the peak of the season. INGREDIENTS

For the watermelon juice

  • 1 small or 1/2 large watermelon cut in pieces

For the jalapeño syrup

  • 2 cups water

  • 1 cup sugar

  • 1 jalapeno

For the drink (makes 1 serving)

  • 2 ounces watermelon juice

  • 1 1/2 ounces tequila

  • 1/2 ounce fresh lime juice

  • 1/2 ounce jalapeno syrup

  • 5 mint leaves, minced

PREPARATION of the juice Put the pieces of watermelon in a blender and liquefy to get a juice.

PREPARATION of the syrup Boil the water, sugar and jalapeño in a medium pot. Let cool. Remove jalapeño once cooled.

PREPARATION of the drink Combine all ingredients in a cocktail shaker with ice. Strain into glass with ice. Decorate with a mint leaf or a watermelon wedge.
