Ginger, lime and Calypso Crab Bite


Valentine’s Day is coming up quick. Got any plans? How are you going to fill your day? Your evening? Personally, we’re going to stay home. Yep, home! The thing is… Last year, my husband and I decided to treat ourselves to a great dinner at our favorite sushi restaurant. They had a set menu that really looked tasty and mouthwatering. But we ended up sooooo disappointed and felt that we had been cheated; the meal wasn’t up to par and it was SUPER expensive. That’s not our idea of a romantic dinner! So we vowed to never again go out to the restaurant for Valentine’s. What we’ve decided to do instead is prepare a really nice and special dinner that will please everyone and will still give us the opportunity to share some love. This little crab bite will be perfect as an appetizer since we’re going to make the kids eat first, put them to bed (quickly I hope!) and will enjoy our own little romantic dinner at home. Now isn’t that lovely?

Ginger, lime and calypso crab bites

Level: BIG KID

 

INGREDIENTS

  • 2 cans of crab meat (240 g)

  • Zest of 1 lime

  • 1 tbsp fresh lime juice

  • 1 tsp fresh grated ginger

  • 2 green shallots, minced

  • 1 tbsp fresh chives, minced

  • ½ tsp to 1 tsp of Matouk’s Calypso sauce (or any of your favorite Caribbean style hot sauce)

  • 2 tbsp of Japanese mayonnaise (or regular, if you don’t have any)

  • Dash of salt

  • 1 English cucumber, peeled and sliced

  • Chives for presentation

PREPARATION

In a medium bowl, combine all the ingredients except for the cucumber. Adjust taste if necessary (we like ours really spicy!). Serve on top of a slice of cucumber and decorate with pieces of chives.
